Stuffed Cabbage Rolls


Aim's Cabbage Rolls with Stewed Marinara
Yield: 30-32 rolls
INGREDIENTS
1 medium head cabbage, par boiled & each leaf cut in half with the large white veins removed

Aim's Stewed Marinara Sauce
Ingredients:
2 cans (14.5 oz) Del Monte Stewed Tomatoes, pureed
1 small can Hunts tomato paste
1 cup (Giant brand) V8 juice
2 Tbs Dominos Light Brown Sugar
2 tsp Spice Islands Sweet Basil 1/2 tsp Mc Cormicks Garlic Salt
1/4 tsp Mc Cormicks Gourmet Collection Ground Red Pepper
2 Tbs Freshly Grated Parmesan Cheese

MEAT MIXTURE:
24 Baby Carrots, par boiled then minced
2 Large Stalks Celery, par boiled then minced 

SAUTE: 
1/2 Tbs Butter 
1/2 Tbs EVOO
2 Large Garlic Cloves, minced 
1-1/2 cups Chopped Vidalia Sweet Onion, minced

COMBINE:
1 pound 90% Lean Ground Beef
4 Links Sweet Italian Sausage
1 1/2 cups Cooked White Rice

WHISK:
2 large Eggs, Whisked
2 Tbs Milk

MIX:
1/4 cup (Giant Brand) V8 Juice
2 Tbs Frenchs Worcestershire Sauce
1 Tbs Dominions Light Brown Sugar
1 tsp Mc Cormick Season-All Seasoned Salt
1/2 tsp Paprika
1/4 cup Freshly Minced Parsley
1 tsp Ground Cinnamon

MEAT DIRECTIONS:
In a large bowl, crumble beef and sausage. Add the rice. Mix together the V8, Worcestershire, sugar, season-all, paprika, cinnamon, red pepper and parsley. Pour over the meat mixture and mix well to incorporate all. In a skillet over medium/high heat, saute the garlic and onion in butter & evoo until tender, then add to the meat mixture.Whisk egg together with milk; pour over meat and rice mixture and mix well.

SAUCE DIRECTIONS:
In a sauce pan add the pureed stewed tomatoes, tomato paste, V8 juice, Sugar, Basil, Garlic salt, Red Pepper and Grated Parmesan Cheese. Stir; simmer for 30 minutes, stirring occasionally.
Pre heat oven to 375* 

PREPARE CABBAGE:
Cook cabbage, carrots and celery in boiling water for 10 minutes or until outer leaves are tender; drain. Rinse in cold water; Separate leaves, set aside. (remove thick veins) from cabbage leaves for easier rolling. Place about 1/4 cup of meat filling onto each leaf; fold in sides. Starting at an unfolded edge, roll up leaf to completely enclose filling. Place seam side down in a casserole dish. Repeat until all leaves are used. Roll any remaining filling into meatballs and add to dish with cabbage rolls. Top with the stewed marinara sauce. Cover with aluminum foil and bake for 45 mins.
To Plate:
Place a couple tablespoons of sauce on plate, place 3 cabbage rolls on top of sauce, sprinkle with freshly grated Parmesan cheese. Serve.

Goulash


Goulash I started yesterday and finished today. 
Brown...
1 lb ground beef
1 lb ground sweet Italian sausage
Along with...
1 teaspoon Italian seasoning
1 teaspoon dried sweet basil
2 Tablespoons Frenchs Worcestershire sauce
1 Vidalia sweet onion, finely chopped
1 green bell pepper, finely chopped
1 red bell pepper finely chopped
2-3 garlic cloves, minced
Do not drain. Add to sauce.
At this point, I put everything in the slow cooker.
For the Sauce...
1 cup Swanson low sodium beef stock
2 cups V8 juice
2 (14.5) Del Monte Italian style stewed tomatoes
1 (14.5) oz Hunts petite diced tomatoes
2 (10.75 oz) Hunts tomato puree
1/4 teaspoon ground cinnamon or more
1/8 cup Frenchs Worcestershire sauce
Palm full Fresh basil, finely chopped
Palm full Fresh Italian parsley, finely chopped
2 Fresh bay leaves
1/2 tablespoon Mc Cormick Italian seasoning
1 teaspoon Mc Cormick pizza seasoning
Pinch of caraway
Simmer sauce for several hours. I usually let it go for about 7-8 hours.
Add cheeses and 1 pound cooked pasta.
3/4-1 cup each of Freshly grated...
Parmesan
Provolone
Shredded Mozzarella
I top mine with a dollop of sour cream and finely chopped spring onion or chives.

The Best THICK Cheese Burgers

Ingredients:
1 pound Lean Ground Beef
1 Tablespoon Worcestershire sauce
1/2 teaspoon Season-All, seasoned salt
1/2 Tablespoon Montreal Steak Seasoning
4 cloves Roasted Garlic or 1/2 teaspoon Garlic Powder
1 Tablespoon Ketchup
1 teaspoon Prepared Yellow Mustard 
1/3 cup Vidalia Sweet Onion, minced
4 slices Yellow American Cheese
4 Potato Hamburger Rolls
Lettuce, optional
Sliced Tomato, optional
Pickle chips, optional
 
Directions:
Place meat in a large mixing bowl
In a measuring cup combine Worcestershire, salt, steak seasoning, garlic powder, ketchup and mustard; mix well.
Pour over ground beef. 
Mix meat just enough to combine all the ingredients
Scoop out 1 cup of meat per burger
*Yes they're huge! But that's the way my Firefighter likes them
I make 1/2 cup burgers for my son and myself*
Form into patties and place in a Ziploc bag, refrigerate overnight
Above burgers are 1/2 cup on Left and 1 cup on Right
Remove burgers from refrigerator place in a skillet over medium high heat
Add a few ice cubes, to create steam
When I place burgers straight on the grill without precooking, I add about 1 Tablespoon of finely crushed ice to the meat
And place a glass lid over them, it helps keep the burgers moist when grilling
Cover with a lid and simmer until no longer pink
Remove from skillet (reserve liquids in pan) place burgers on grill to add grill marks
Brush the inside on the buns with the juices from the pan and place on the grill
Makes beautiful and delicious grill marks on the buns
Lovely grill marks on the burgers as well 
I like to grill slices of Vidalia sweet onions 
 Cheese Burger topped with Yellow American Cheese, Grilled Onion, Ketchup and Mustard
I love the burst of color *&* flavor!
Serve with Potato salad and Corn on the Cob
Thick *&* Juicy

Also Awesome Topped with Mushroom, Onion and Swiss
Hubby always says they're so flavorful that he doesn't need condiments

Sweet Southern Meat Loaf

This was My Grammy's Recipe
It is the most delicious meat loaf
I've made a couple additions
Honey and nutmeg makes this sauce so very lovely!
My mother made an Italian version with green pepper, which was good
But I am so partial to this meat loaf.. Its the best I've ever had
Ingredients:
2 pounds Lean Ground Beef
1 Tablespoon Worcestershire Sauce
1 cup Vidalia Sweet Onion, minced
1/2 cup Celery, minced
1 teaspoon Season-All, Seasoned Salt
1/2 teaspoon Freshly Ground Black Pepper
2 Tablespoons Roasted Garlic, mashed or 1/2 teaspoon Garlic Powder
1/2 teaspoon Poultry Seasoning
1/2 teaspoon Ground Nutmeg
1/2 teaspoon Dry Mustard
3 slices White Bread, ground into crumbs
1/8 cup Warm Milk
2 eggs, whisked
1/4 cup Honey
Sauce:
1/2 cup Ketchup
1/4 cup Honey
1/4 cup Light Brown Sugar
1/2 teaspoon Dry Mustard
1/2 teaspoon Ground Nutmeg

Directions:
Preheat oven to 350 F.
Because I was making potato salad the same day I seasoned/marinated my meat loaf
I used celery and onion juice in these loaves.
Great idea for those who don't like to bite down on chunks on celery and onion.
 I placed the ground beef into a gallon size Ziploc bag
then added the liquids, seasonings and honey
This makes for a less messy way of mixing the meat
Once mixed, refrigerate overnight
Before forming into loaves
Heat milk (do not boil) add to bread crumbs
whisk eggs
Add the breadcrumbs and milk to the meat mixture 
Combine sauce ingredients
 Divide the meat mixture into two equal parts
Place the meat into two Pyrex (502 refrigerator dishes) loaf pans
 Pour sauce over top, cover with glass lids
Bake 30-40 minutes @ 350 degrees F. 
 Glass lids help to cook the loaves more evenly

As you can see, they also prevent splatter in the oven
Enjoy! 
I like to serve these with Calico Beans, Fried Cabbage and Cornbread Muffins.

  Below I served a large meat loaf with creamed spinach, glazed baby carrots, and creamy garlic mashed potatoes and gravy.

BBQ Sandwiches

BBQ Sandwiches
Here is one of those recipes I so loved from my childhood
My mother used the Original Kraft BBQ sauce, Worcestershire, celery, onions and whole cloves
I prefer KC Masterpiece, hubby likes Sweet Baby Rays
Use your favorite bbq sauce, they all work well with this recipe
This has a homemade and store bought BBQ sauce in it because I really like my grandmothers BBQ, so I combined both to make my own version.
Use your choice of meat... beef, chicken, pork or turkey
Ingredients: 
1 pound Ground Beef
1 Tablespoon Worcestershire sauce
1/4 teaspoon Liquid Smoke
1/2 cup minced Celery
1/2 cup minced Vidalia onion
1/4 cup Green Bell Pepper, optional
1 minced Garlic Clove, optional
1 cup Heinz (no salt added) Ketchup
1 Tablespoon Domino Light Brown Sugar
1/2 Tablespoon Guldens Spicy Brown Mustard
1 Tablespoon Regina White Wine Vinegar
1⁄4 teaspoon Ground Cloves
1/2 cup KC Masterpiece Brown Sugar BBQ Sauce
Directions:
Place ground meat in a large skillet over medium-high heat, season with Worcestershire
Cook until evenly browned, stirring to break up clumps and no pink remains (about 5 minutes)
Drain meat very well
Place meat into a food processor, finely chop
Add vegetables to skillet, cook until tender and onions are transparent
Add meat back to skillet
 
Stir in sauce
Simmer for 30-40 minutes
Be sure to stir frequently to prevent the sauce from burning and sticking to the bottom on the skillet
Serve on potato hamburger buns or rolls of your choice
I like to serve with a pickle wedge and a side of coleslaw
A lot of people like to add coleslaw to their BBQ sandwiches

As promised...
Here is my family's favorite
Creamy Buttermilk Coleslaw
I prefer to eat this on the same day its made
Ingredients:
4 cups Green Cabbage, finely chopped (1 lb)
4 cups Red Cabbage, finely chopped (1 lb)
1/4 cup minced Baby Carrots, minced
1/4 cup Vidalia Sweet Onion, minced (juice squeezed out)
Sauce:
1/4 cup granulated Sugar
1/8 cup Buttermilk
1/8 cup half and half
1/2 cup mayonnaise
1 1/2 Tablespoons White Wine Vinegar
2 1/2 Tablespoons Fresh Lemon juice
Kosher salt and pepper, to taste
Directions:
In a large bowl, mix cabbage, carrots and onions; set aside
Whisk together sauce ingredients
Pour sauce over cabbage mixture
Refrigerator for one hour
